There were Vanzants' in Woodford Co., Ky. This may be a variant of the spelling.
There were at least 2 other counties taken from Woodford after 1790-Franklin, in 1795, Scott in 1792. Have you checked these counties?
If he did die in Woodford County, yes, there would be a probate record, and the will would be recorded if he had a will, if not, he died intestate, and if there was real and personal property involved,there should be something in the probate office, but, not always, I know of one case, death in 1833, had living heirs and land, canot find anything on this in Woodford County in the probate or land records
