mother: Sissie Adkins [definitely "S"issie]
informant: wife Myrtle Watson

Thursa Watson
died February 13, 1931 Fleming County, KY
born August 22, 1878 KY
father: Mathew Adkins, born Elliott County, KY
mother: Hangeline Adkins, born Elliott County, KY
informant: John Watson

I'm guessing you've already checked Henry's social security card application for the names of his parents. Adopted mother Thursa's maiden name Adkins is interesting...wonder if she could have been Henry's cousin of sorts?
