I can only answer one of the questions you posted (over a year ago) -- John Koons/Koontz's mother's name -- and it's an iffy answer. But I have your Henry (m. Elizabeth, d. Perry Co OH) as a son of George and Susannah (Shroyer) Koons (my line). I've been working on this family for a long time and am certainly not confident I've got it right, so I'd be very glad to know what you have.
I have Henry Koons (Kuhns, Koontz), who d. Frederick Co MD 1822, father of John Koontz (a Frederick Co history says John used this spelling) who m. Catherine Roar 1780 -- think that much is accurate, unless I have Catherine attached to the wrong John, but I'm not aware of another John in the area at that time. Not so sure of this: Henry's wife was Dorothea, b. 1734, d. 1789, bur. Lutheran Cemetery, Frederick Co MD.

Does look as if this tombstone does, or did, exist. I attached her (with a ?) to this Henry because of her dates. The next Henry, son of above Henry, prob. born in the 1750s or 1760s.
I have six children for Henry and (Dorothea?): George, b. 1753; John; Abraham, b. 1755-1765; Henry; Magdalena, b. 1761; and Anna Maria, b. 1770. The latter two birth years from same source as Dorothea's tombstone, so not a primary source.
I have no children for John and Catherine, and Henry was a much repeated name in the family, so it's entirely possible that I've made a mistake and attributed information about a son of John to my George's son Henry. But here's what I've got -- I won't include sources here, but can send them later if you're interested. Some of my sources better than others, so not much here that's carved in concrete.

(2) 26 Dec 1840, Perry Co OH, Drusannah Ann (Drusey) Usher. I have nine children for Henry and Elizabeth, including Samuel, b. ca. 1808 Frederick Co MD, still living 1880 Perry Co OH, m. Hannah Morgan 4 Oct 1827, Perry Co OH.
Margaret Koons, b. 3 Jan 1789 Frederick Co MD; d. 14 Apr 1868, Perry Twp, Wood Co OH; m. bef. 1810 prob. Frederick Co MD, Jacob Hyter.
Mary Koons, b. 1784-1790 Frederick Co MD; d. 21 Dec 1828, Perry Co OH; m. ca. 1802, prob. Frederick Co MD, Samuel Ogborn. (My line; I don't have absolute proof that this is the Mary who m. my Samuel Ogborn, but a ton of good circumstantial evidence, and I do think she's the right one.)
Catharine Koons, b. 1792 Frederick Co MD; m. Daniel P. Stimmel.
Peter Koons, b. 8 Jan 1795 Frederick Co MD; d. 28 Feb 1876 Frederick Co MD; m. 16 May 1825 Frederick Co MD Mary Ann Ott.
George Koons, b. 1797 Frederick Co MD; d. 5 Apr 1878, Preble Co OH; m. 6 Mar 1823, Frederick Co MD Lydia Holtry.
Joseph Koons, b. 1800, Frederick Co MD.
