Okay... So I did the research in Trier, Germany and found out that the whole Jewish connection was off. We come from a very strong Catholic tradition in Saarland. As Roberta Whitacre pointed out Great-Great Grandfather Mathias Kollmann is from Britten, Saarland.
Now the Kollmanns of Britten have their records stored in Trier's Geneological records till the 17th Century. At this point the geneologist stated I need to go to Merzig to go deeper.
Also, this region is rich in coal and the name more than likely is directly related to coal collectors, so they very well could have been coalmens.\
