I am having big troubles finding info to prove the ancestors I am researching provided military services in colonial days. What sources should I use?

The date I have been able to trace back has been 1683 and I fairly certain this particular family came to America in the early 1600's.

I don't know the name of the ship they used, or, where they settled once they arrived. Would this be a good place to begin?

I'm not sure how to go about obtaining the much needed military info of Samuel Scutchins, or, Thomas Scutchins. The surname has been written like that, but, also: Cutchin, McCutchin, Scotchings, etc.
