I have made a couple of excellent finds in websites that I think might be helpful to you.
www.genealogylinks.net has a listing for parishes.I was able to contact the secretary for St. Just in Roseland.She was very helpful in providing me information for a couple of gaps I had in my family tree.

Falmouth is about 1 1/2 miles from Penryn.St. Mawes is across the river Fal from Falmouth and Penryn, so a family link is possible.
You mentioned that your great grandfather was William J. Jose and that he was born in 1819.The date troubles me.All of my great grndparents were born in the late 1860's and early 1870's.I am 57 years old.Your great grandfather being born 40 earlier would make you quite elderly.If I have insulted you, I apologize.
My great grandfather was William Henry Jose, born in 1872 and married to Maud Mary Harvey in 1895.His father was Francis J. Jose, born in 1842
William and Maud had 5 children.Ivy ( my grandmother), Francis, William, Les and Reginald.
