You can research the records yourself and find what you ae looking for without sending to Italy. Go to your local Family History Center and rent copies of the microfilms of the civil records of Spoltore and/or Catignano. The civil records are the birth, death, and marriage records of the towns between 1809 and 1900-1910. They contain an amazing amount of information. Since you know where they should be located, then you can find out when they were born.
You start with knowing that your grandfather was born in 1871. That record will tell you the father's name, the mother's name, and the ages they were when he was born. This can lead you to their records. Usually the ages can be off a little so don't take anything as golden...they didn't care too much about how old they were.
There is often the name of the father's father as well. With the earlier records...before about 1865, the church where they were baptized will be listed as well. The birth records are good to start with. Now, get the one that includes 1871. And if you are daring, order the approximate date of birth for your great-great grandfather at the same time. If your grandfather was first born, then go back about 25 years to find your great-grandfather's records. Legal age for marriage was 21 and they married later then most people think. If your grandfather was the first born, then his grandfather would have the same name....naming patterns were followed most of the time and Gioacchino would have named his first son after his father.
All the records are in Italian but even if you do not read it, a dictionary will enable you to get most of it. There is a book by Trafford Cole named "Italian Genealogical Records" that is great at explaining what is in the records and how to read them.
The birth records are where to start and will get you back a few generations. The death records are even better, but you have to find the family members for these to make sense.
