Catherine died in 1866 at age 66,so looks like we have the wrong birth year for her, so the correct birth year is approx 1800.
Patrick was a licensed surveyor and in his obituary it states he was Esq of Boyle, so looks like they lived in Boyle.
The family left Ireland from Dublin on the ship "Crusader" (20/9/1839) which arrived in Australia on 15/1/1840. I have found records from the NSW State records.
They had 5 children whose supposed ages on arrival were
Bernard -age 20 ( born 1920 ?)
Margaret- age 19 ( born 1821 ?)
John-age 17 ( born 1823 ?)
Catherine- age 15 ( born 1825)
Thomas- age 12 ( born 1828)

I have an obituary their son John stating he was born in Roscommon in 1826, but with the ship records of 1840 he should have been born in 1823.Makes searching a little more difficult !!
Thanks for your help & advice.
