I research the Irish Family History Foundation's database. It contains 12,700,000 surviving rcds for abt 70% of Irish counties. Rcds are increasingly sparse B4 1840, rare B4 1800.
Note 1 - Without a KNOWN county, the chance of an ancestor's rcds NOT being in this database is AT LEAST 30%.
Note 2 - Only 1/2 of Co. Cork's rcds are in this database.
Note 3 - The RC church kept control over most parish rcds from Tipperary (north). These are ONLY available thru the Tipperary Family History Research center at a substantial fee (regardless of outcome).
For John Carroll M 1853 +/- 4 yrs, Co. Limerick, I found 16 rcds, but none in St John's. You would have to view all 16 to find which, if any, had parents listed as Andrew and Jane.
For Mich(ael) Carroll M 1857 +/- 4 yrs, Cappagh parish, Co. Limerick, I found 2 rcds: 1856, & 1857.
For H(onor) Stokes M ditto, I found 1 rcd in 1856. This is a match. These rcds are highly likely to be for these ancestors.
For John Carroll B 1829, St John's parish, Co. Limerick, with a father forenamed Andrew, I found 1 rcd.
For Mich(ael) Carroll B 1834 ditto, I found ditto.
For Andrew Carroll M 1825 +/- 4 yrs, Co. Limerick, I found 0 rcds. The closest was in 1811 - too early for your timeline.
While Limerick City parish churches have rcds back to the mid 18th century, this is not true for the more rural parishes.
Google the Foundation's name to lead you to this database. Register, opt to be notified as rcds are added and browse. Pls post your search results to my genforum msg.
