Thanks for that Ralph. I should have been more specific with dates so you didn't waste time looking in the wrong places. How long do you think it will take before Monaghan is listed online? It says it costs money to view each individual record - how much detail does it give on records - parents' names and spouses' names or just basic info?
I managed to find the Grays, Lemons and the Chapmans on the 1911 census.

For some reason all the John Gray was living with his grandparents and Clemena Lemon, Mary's sister, was living with the Grays. All of the Gray children are accounted for, but there are only five out of ten Chapman children, and no mention of the father, but it says that the mother is married not widowed? There are 11 children, 10 alive. I only have ten children listed, so I guess one died as a child.
This is what my mother wrote about her parents' siblings in the book "The History of Our Family":

JOSEPH (emigrated to USA) - two sons
ANNA ditto (USA) - not sure whether this is in reference to the two sons bit as well. I found an emigration record for an Anna Chapman from Monaghan in 1907, aged 10, when she emigrated with her siblings Martha, Margaret, Charlotte and Robert, and her parents William and Margaret, to see William's sister Maggie SLOAN, but I'm not sure whether this is the same one.
ROBERT - children: ESMOND, ROBERT, WESLEY, WILBUR, LILY, LUCY, MAUD, spouse: HARRIET - may actually be another child, I can't tell as it crosses over the lines. I found birth records for a few of the children but I didn't find a marriage record for Harriet. I'm betting she wasn't actually called Harriet!
SAMUEL - killed on the Somme, aged 18. I found his war record and his death was recorded on the Commonwealth War Graves' Commission - 17934, 9th Battalion, Royal Irish Fusiliers
GEORGE - bachelor, ASHBOB, NEWBLISS - weren't the Lemons from there?
MARGARET - no family
WILLIAM - children: GLADYS and BOBBY (NEW ZEALAND), spouse: LILY
AMELIA (carlow) - children: VERA, VIOLET, EMILY and NORMAN SIXSMITH (carlow), spouse: CHARLES HARRISON SIXSMITH (I found this out myself)

Here's some more details:
John Gray, born 01/06/1895, Belfast, married 28/04/1920, Killeevan, Monaghan, died 27/05/1967, Clones
Lucinda Isabella Chapman, born 04/04/1899, Clones, died 08/11/1942, Clones
Thomas Gray, born Dublin c. 1865, married 05/05/1891, Armagh Third Presbyterian Church, Armagh, Ireland
Mary Elizabeth Lemon, born 30/12/1867 Roslea
As Mary was born at the end of 1867 she would be registered in 1868 and the births for Letitia, Margaret and David all tie in.
Thomas Lemon was listed on the 1901 census as being 55 but is 72 in 1911 so I'm a bit confused. All I know is that he lived to almost the age of 100. I have a copy of his marriage certificate and it lists his father as David. The three possible records I have found for his mother were Mary Todd, Martha Hetherington and Mary Patten. Mary Todd was Martha's mother in law and Martha was married to a different David Lemon, so Mary Patten seems to be the option.

which says Mary Patten — Child of Rachel Blakeley/James. Married David Lemon. It gives a lot of information about the Pattens but it seems to be some kind of database for famous Scots, so I don't know how they were famous? On here it lists a David Lemon as a poet so maybe that is where the connection lies?

I have ordered John and Lucinda's marriage certificate and Lucinda Isabella Chapman's birth certificate so hopefully that will confirm some things.
