I searched the Irish Family History Foundation's database. It contains 11,500,000 surviving rcds for abt 60% of Irish counties. Rcds after 1840 are fairly complete. Your chance of finding her B rcd in the existing database is around 50%.
You didn't state an estimated B date. Therefore, for Mary Hare (+variants) B 1865 +/- 4 yrs, I found 111 matches. Only two were B in Limerick. Of the 111, only 1 of them was had a middle name of Elizabeth. In many cases, middle names were not rcd'd in parish rcds.
Suggest you search for the actual birth date and at least a county if not a parish B4 exploring further. When you have more info, google the Foundation's name to lead you to the database.
For John Hewson B in Limerick, there are several B rcds which might be for her husband: 1 in 1851, the next in 1856, and the last in 1873. Since it seems that you have visited, or have access to the gravesite, a headstone inscription with his DOB may exist. Another alternative is to contact the General Register Office at http://www.groireland.iehttp://www.groireland.ie for his death certificate. This usually shows a date of birth.
