The surname Bumpster would not have been common in Ireland, but records show the name nevertheless did exist, mainly in the county Waterford, where Mary's husband Patrick O'Hearn came from.
I searched an Irish property tax record known as Griffiths Valuation for the surname Bumpster at the subscription website called Origins.net
I only submitted the surname Bumpster but did not choose a county in the search criteria at the Origins website. This website shows the alternate spelling "Bumster" is only found in County Waterford in Griffiths Valuation, which was enumerated in the 32 counties of Ireland between the years 1847 and 1864. The valuation for County Waterford took place between 1848-1851. It's possible that Mary's father was part of the Waterford enumeration.
Griffiths shows only four "Bumster" surnames, again, all in Waterford. Below are the index entries for the Bumpser surname in Griffiths. The entries not only include the last and first names of those enumerated, but also the Civil Parish and townlands where these individuals had lived:

After finding the Civil Parishes and townlands where the Bumpster name was recorded in Griffiths, I then searched Griffiths Valuation for William Troy in County Waterford. I wanted to see if any Bumpsters and Troys had lived in the same Civil Parish or townland. The results follows:

As you can see above, there is one William Troy who lived in the Civil Parish of Stradbally, townland of Carrigneennahaha. Stradbally is also the Civil Parish where Griffiths Valuation shows a Robert Bumster had been enumerated, though Robert had lived in the nearby townland of Stradballybeg, rather than in the townland of Carrigneennahaha. It's possible that your Mary Bumpster came from the Civil Parish of Stradbally, but this is only a guess.What the Griffith Valuation record shows however, is that the surnames Troy and Bumpster were in close proximity to one another in County Waterford, as both surnames are found in the Civil Parish of Stradbally.
The government of Ireland did not commence with the Civil Registration of births, marriages, and deaths for all religious denominations until the year 1864. The exception is the government did begin to record Protestant marriages in 1845. This means there would not be a birth record for Mary Bumpster or a marriage record of her parents.
I'm not sure if your ancestors were Catholic or Protestant, but there is a possibility that there is a baptism record for Mary and a marriage record of her parents in the church registers for the family's religious denomination. Of course, you would have to know where Mary was born to access these parish registers.
The Latter Day Saints (LDS) have filmed parish register abstracts for the Catholic Church that served the parishioners in the Civil Parish of Stradbally. These registers cover the years 1797-1839. If you would like to search these abstracts on the chance that your ancestors were from this Civil Parish (and provided they were Catholic), you can order the microfilm of the abstracts. The Church of Ireland benefice of Stradbally included the vicarages of Stradbally, Clonea and Ballylaneen, in County Waterford.
It is actually in the Diocese of Lismore, which is now united with the Diocese of Waterford.

Again, I can't be sure that Mary or her parents came from the Civil Parish of Stradbally, or even from County Waterford, though Waterford is most likely the county where they had resided before emigrating, based on the records found in Griffiths Valuation.
If you do search the Stradbally church registers and do not find information about your ancestors, but want to continue your research in church records for the Troys and Bumpsters living in the other Civil Parishes and townlands listed in Griffiths Valuation, please let me know and I'll see if the LDS has filmed those registers for the early to mid 19th century.
If the registers have not been filmed, I'll see if I can find the name and address of the parish priests serving in those parishes. I would need to know however, which religious denomination your ancestors belonged to.
Concerning Civil Registration records, I found several birth record entries on the British Isles Vital Records Index produced by the LDS. As with the Griffith Valuation search, I only submitted the surname Bumpster without selecting a location. All of the births on the index took place in County Waterford. Ironically, the parents for three of the entries are William Bumster and Alice Troy. All the births took place after 1864, and all come with LDS microfilm numbers.

It's possible that William Bumster and Alice Troy shown in the records above were related to your own Bumster and Troy ancestors. But it is impossible to know if they indeed were related just from the birth records alone.
Concenring the surname Bumpster/Bumster in modern times, I found it exists in County Waterford to this day. Valuations still take place in Ireland, but these valuations are for owners or lessors of commercial and industrial properties, whereas Griffiths Valuation enumerated mostly farmers, as farming was the major occupation in mid-19th century Ireland.
I found a William and Helen Bumster living in the townland of Gallowshill on Cathal Brugha Place, and a Kathleen Bumster in the valuation for Dungarvan, County Waterford, living on St. Brigid Street. If you eventually learn that your ancestors came from Waterford, you may want to consider writing or phoning the above indivduals to see if you share the same ancestors.
With the information found in Griffiths Valuation, the modern valuation for Ireland, the British Isles Vital Records Index, and the phone listings, I think that Mary's death record would have been accurate as to the Bumpster surname being found in Ireland. If a typo exists in the death record, it could have been the addition of the p in the surname, turning it from Bumster to Bumpster.
