Queens Co in famine

My gg-grandmother, Catherine Moore Swain, arrived in US around late 1860s/early 1870s...according to the census for Utica, NY, 1880. I have been to the Offaly Family History Center and found their church records, but am curious as to why...after the famine...did they emigrate. I'd like to know how County Laois (Queens County) was affected by the famine and would appreciate any references relating to same. Thank you.
