You've probably searched all over the internet and that's what I've done, too, so maybe you've already come across this, but here is what I found on various websites. There are some conflicting thoughts/multiple meanings:

Crescent - Emblem of the Virgin Mary
Crescent - Denotes that the deceased was a Muslim in life.
Star - Spirits Rising (also Masonic attributes if five points)
Star, five-pointed rounded tips - Grand Army of the Republic
Star - Stars stand for the spirit, piercing the darkness as an expression of their triumph against the overwhelming odds of oblivion.
