Shell imbedded on top of grave

My paternal grandfather died in the early 60's. He was buried in an old cemetery North of Pensacola,Florida. His grave has a large Concha shell imbedded on top. I know his wife had it done; but I have no idea what the symbolism was.

I have also noticed several grave sites with large shells in other states. Would anyone have any ideas about this custom?
