Well, it turns out I just needed to go one more census year for my answer:

1880 - IN: Cass Co: Tipton Twp
STROH David 75 Widow Retired Farmer Germany

I also found his daughter, Elizabeth, married 7 Jan 1866 in Cass Co., IN, to Wilson BAKER. She married him as Elizabeth STRAW, a common variation of STROH. So the Edward BAKER (age 4) living with Gottlieb David & Mary STROH in the 1870 census appears to be Elizabeth's orphaned son.
