Thought I'd try to help you find Sarah's family.....
You mentioned the 1900 of Grant County, OK; the niece listed with Henry and Sarah Knowles is MILLIE FURNISH, born in MO in 1889. Henry and Sarah have only been married 11 years, while Henry's son Warren is 17, so Henry has been married before Sarah. Sarah has also been married previously, as she has had one child and one child is living, but not in her household.

Go to the LDS site "Family Search":

In the search boxes but Henry Knowles and SADIE ALPHIN for his spouse. Click on the Ancestral file link for this couple. When their page comes up, you can click on "family" link next to Sadie's [nickname for Sarah] father, William Alphin. This will give you the list of siblings, etc. for Sarah. Her mother was Mary Sealey, according to the researcher who compiled this file.

Since it states that William and Mary Alphin died in Sedgwick County, Kansas and Warren Knowles was born in KS, I went to USGenWeb's Sedgwick County page and did some looking. I would advise going there, as they have a wealth of information and you will have a great time hunting for data! Anyway, I found:
Allphin, Sarah F. to GAGER, Merton E. 4 June 1879
Allphin, Ida L. to FURNISH, James W. 8 March 1881
Knowles, H.A. to GAGER, Sarah F. 31 October 1888

Merton E. Gager and Sarah Allphin Gager were divorced 19 October 1887 in Sedgwick County. A year later she married Henry Knowles. Maybe you will find her child by checking Gager marriages in Sedgwick County. I quickly looked at the 1880 for Sedgwick County, Merton was 37 and Sarah was 23 with no children at that point. If she had a child soon after, that child would have been old enough to be married by 1900, or out working and not living at home with Sarah and Henry.
