You said: "I'm assuming that this is the mother in question as there is only one listing."This assumption is correct in this case, but in general it is a very dangerous assumption to make regarding Icelandic records - in particular before 1785, as church records are verry spotty before then.
Some notes on Katrín - Jón was her second husband - the first one was named Ketill, but he died around 1788.
As for Jón Jónsson, he was also known as Jón Gyðuson (Gyða being a short form of Gyðríður - his mother's name). Nobody knows why, and none of his 11 siblings were known like that.
The ancestry of Gyðríður is unknown, but his father, Jón Jörundsson was the son of Jörundur Rögnvaldsson, son of Rögnvaldur Oddsson, son of Oddur Ásmundsson, son of Ásmundur Jónsson, son of Jón Einarsson, son of Einar Ásmundsson, a farmer at Ketilsstaðir in the late 16th century.
