Stillnothing on S. Baldwin Olmstead on Otsego County, just Carlisle. (Are you sure of that birth place?)
The historical society of the county might be your best bet, as many of these early records are not yet digitized and available online.
Do try searching the Ancestry.com card catalog with key words such as Otsego County or even Olmstead. Some of the New York counties have early census indexes digitized, thanks to volunteers. (However, your Samuel Baldwin Olmstead was in Iowa already by 1838, and I think the town census indexes start after 1840.) There are also church indexes, biographies, etc.
Carlisle Olmstead in Otsego County belonged to a Congregational Church in Otego, Otsego, New York:

One wonders if Samuel Baldwin Olmstead’s middle name comes from an ancestor in this Baldwin family (a long shot).
