No one seems to know who her parents are, censuses say born in Scotland, but nothing else. She married William Zelotus Moffitt in 1884.
They didn't flee Utah that quickly, apparently. 1880 census has them in Salt Lake City as silver miners. Catherine is married to William Adair (unsure when), and her brothers are in the same household. No sign of William the elder.

By 1915 she is widowed, living in Shenandoah. In 1920, she has a roomer. I believe she is still in Shenandoah in 1930, but the Katherine Moffitt I found says birthplace Iowa/Scotland/Scotland.
I finally located a 1925 census, which lists parents' names and places of birth. The best I can do is W. Ledingham and C. McKay, which I'm sure doesn't help much. Both born in Scotland.
