I've read your post a couple of times now and I think I may have figured out who Bessie's family was. I'm sorry to say I don't know what became of her after 1910 (see my note at the end of this post).
In the 1900 census it shows that her father was born in Arkansas and her mother in Alabama.

Since I did some research on Hunt Township in the 1900 census I looked back thru the census and my notes to see who might be a good fit. Berlene suggested looking at James Hunt Jr. and Mary S. (Millard) who had a daughter named Elizabeth about the right age. I have her married to Thom Pollard (who lived with her family in Hunt Township as a boarder in the 1900 census). She was known as Bettie Hunt and born in January 1884.
Tonight I went thru the 1900 Hunt Township, Scott County, Arkansas Census to see if there might be another Elizabeth Hunt who could fit. The fifth family in the township was Francis B. Hunt and Missouri (Walter). Missouri listed having given birth to 9 children with 5 living. Their family is only 5 houses away from James Jr. and Mary Hunt.
In dwelling number 60 (shown above) is Thomas Pool and wife Bessie living with his widowed mother Rebecca Pool. Bessie lists her mother's state of birth as Alabama.
Then in 1910 in Yell County I found Millard Hunt and wife Ada living next door to Thomas and Bessie Pool. If I'm correct Millard was the brother of Bessie Hunt Pool:

Mrs. Frank Hunt, aged 66, died Sunday, Oct 10th at the residence of her daughter, Mrs. James Stringer in Waldron. Funeral services were conducted at the Duncan Cemetery Monday by Rev. G.G. Johnson, pastor of the Methodist Church.
Deceased leaves three children, Mrs. Stringer, Mrs. Carte and a son Millard at Danville. Six children having preceded her. Mrs. Hunt was a kind, good woman, well respected and liked by all who knew her. We extend sympathy to the bereaved husband and children.

Mrs. Frank Hunt died Sunday at the home of her daughter, Mrs. James Stringer, in Waldron, after an illness of several months. Mrs. Hunt was about 70 years of age and leaves a husband and two daughters, who have the sympathy of the Record in their bereavement.
