My family name is Vas as well, changed from Weinberger, and it seems to be a rather common name-change for Jewish people(my grandfather was Jewish as well). Although I couldn't yet find records of my family (I live in Hungary, so it's a question of time only).
I don't think that is has any religious meanings, it means iron, maybe it was to suggest the strength of the people who chose this name, I don't know. But as I see in Hungary the people with this surename are often of jewish origin; and it is a name that was changed form a less Hungarian-sounding name, I'm almost 100% sure.
Many people write it with double s, my family uses both simple Vas and Vass.
