I can't add any information to connect William James Hoge of Texas to William S. Hoge of Missouri, but I recognize William S. Hoge as a descendant of the immigrants William Hoge and Barbara Hume. He is listed on Craig Canada's web site

and Mary N. Triplett's rootsweb page

In both of these sources, William S. Hogg has a son named William Jackson Hoge. William S. Hoge's grandfather was named James. It seems very possible that you are correct in suggestion the connection between the Texas William and the Missouri William
