Lafayette Hinds can be found in the following census records:
1860 Census, Texas, Van Zandt Co., Sabine - L. Henes 32 born AL. & Jo Hiney 8, born TX. It would appear that he and his oldest child, Joseph are Wool Carding. No other family members present. Could not locate wife Mary, Oscar, or mary, all of which should be in the 1860 Census. Maybe Nancy is living with a teacher. (The differences in spelling are the result of enumeration, and transcription of the census handwriting for online use.)

1870 Census, Texas, Van Zandt Co., Canton PO
Lafayette Hinds, wife Mary and seven children. He is a farmer.

1880 Census, Texas, Hill Co., Precinct 2
Lafayette "Hints" Hinds, 51, and sons George and William are living with him. He is a widower and a Farmer. Nearby are other married members including Joseph and Paralee Hinds.

1900 Census, Texas, Callahan Co., Justice Precinct 4
Lafayette Hinds, 71, is living with Wylie Lambert and wife Mollie (Mary Hinds 42) Lambert.

1910 Census, Texas, Wichita Co.,Justice Precinct 2
Lafayette Hinds 81 is living with his son Wm A. Hinds 41,
FamilySearch.org lists Lafayette'e birthdate as 14 Aug 1825, and death date as 11 Jan 1911, Winters, Runnel Co.,Texas. Runnels Co. is the census location of Mary Hinds Lambert in the 1920 Census.
The children's names: Joseph, Nancy, Oscar, Mary, Martha, George, and William. It would appear that he married once.

I have only collected the above census data and do not have additonal information.
