Sorry to tell you that I have nothing on the parents of Thomas S. Headen. However, I like your logic on this one.
A "Thos. S. Headon" served as the bondsman for your Anna Maria Headon's marriage to Robert D. Freeland on 21 Oct 1823, Maury Co., TN [TN, Marriages, 1787-1866 Marriage Records, online genealogylibrary.com, Marriage Bonds, Page 174].
Also, note that Margaret "Peggy" Moore's sister, Jane Moore, married Thomas Freeland on 23 Feb 1820 (sol. 24 Feb 1820), in Maury Co., TN [TN, Marriages, 1787-1866 Marriage Records, online genealogylibrary.com, Marriage Register 1, 1808-1837, Page 15]. The 1850 census shows them living next door to your Ann(a) Maria and Robert D. Freeland in Henry Co., TN. Robert D. & Ann Maria are found in household 72-72. The Ann Maria Freeland entry indicates that she was born in NC. In the event that you do not already have this information, here is the household listing:

Have you seen the RootsWeb WorldConnect entries that indicate Thomas S. Headen was the son of Brantley Jones (one entry shows Brantley Jones Headen, and another gives fathers name as Brantley Jones, only) and Phoebe Brooks? The following link is to the one that shows his father as "Brantley Jones":

I have no research that confirms or disputes the above. However, the 1850 household of Thomas S. Headen shows the following inhabitants (note the 10 year old Brantly Headen):

FYI, when considering the above children in relationship to historic naming patterns, the only children that appear to be named for the Moore side are Margaret and Samuel. Many of the RootsWeb WorldConnect entries for Thomas S. and Margaret (Moore) Headen show their children as follows (my notes on naming patterns are in []’s):

As to the death date of your Ann(a) Maria Headen Freeland, I have no information. However, she is not listed in Robert D. Freeland’s 1860 household, shown as follows:
