Henry Haas/Hass/Hoss 1850 -1878 in Carter County TN

I am looking for further information about Henry Hass who lived in Carter County TN and was married to Lucinda Bowman. Henry & Lucinda are listed in the 1850 & 1860 census as "Hop" or "Hops". In the 1870 census, he is listed as "Hass" or "Hoss". There is also a William Hop married to Dorcas listed in the 1860 census (living 6 houses away from Henry) who could possibly be his brother. I have information about Henry & Lucinda and their children but do not know their parents. Any help or leads would be appreciated.
