Mr. Gatlin,
I did a little research this week. I think your Jack/John Hartsfield was enumerated in 1840 as John Heartsfield in Bedford County, Tennessee. The Bedford County Hartsfield are all from the following family in Wake County, North Carolina:
Andrew Hartsfield (24 July 1746 to early 1823),
married a daughter of William McElroy,
and had the following nine children listed in his will (signed 20 December 1822, Wake County, NC):
1. William Hartsfield (early 1770s)
2. Haskah Hartsfield (about 1775)
3. Andrew Hartsfield (about 1776)
4. Obedience Hartsfield (13 November 1779)
5. Solomon Hartsfield (11 March 1782)
6. Sarah Hartsfield (about 1783)
7. Nathan Hartsfield (about 1784)
8. Rachel Hartsfield (late 1780s)
9. James Hartsfield (about 1796)

Of the five sons listed above, only William or Andrew could have been the father of Jack/John Hartsfield. Jack was born before Solomon, Nathan, or James were married. Nathan(-iel) and James both moved to Tipton County, Tennessee before 1830.
I descend from William Hartsfield through his son, Jacob, who was born about 1799 in Oglethorpe County, Georgia. Both William and Andrew appear for a few years in Oglethorpe County, Georgia before returning to North Carolina and later moving to Bedford County, Tennessee. Any wills or estate records in Bedford County have burned in one of three courthouse fires in Shelbyville. The deed records survive. Jacob Hartsfield quit claim of his interest in the late William Hartsfield's lands thus proving that he was an heir. Perhaps there is a deed proving Jack's relationship to either William or Andrew.
Going back to Oglethorpe County, Georgia, both William and Andrew appear there: William appears by August 1797 and Andrew appears in a 1798 tax list (once he had turned 21). William moved back to Wake County, North Carolina in 1800 but Andrew remained in Oglethorpe County, Georgia through 1805.
According to the 1850 Census, Jack was born in 1802 or 1803 in North Carolina. The 1860 Census also shows John born 1802 or 1803 in North Carolina. I would take this to mean that he was more likely the son of William Hartsfield than Andrew Hartsfield as Andrew was still living in Georgia at the time John was born in North Carolina.
John's oldest child was William A. Hartsfield. Perhaps he was named for a grandfather. John was probably named for his maternal grandfather. William Hartsfield's father-in-law was John Sexton. Andrew Hartsfield's father-in-law was John McElroy. I did not see a "Celia" nor a "Rebecca" in John's 1850 household.

John Hartsfield, born 1802 or 1803, Wake County, North Carolina; apparently the son of William and Celia (Sexton) Hartsfield.
William Hartsfield, born about 1774, Wake County, North Carolina; son of Andrew and (McElroy) Hartsfield, married Celia Sexton, daughter of John and Mary Sexton.
Andrew Hartsfield, born 24 July 1746, probably Granville County, North Carolina (now Franklin County), son of Andrew and Sarah (Lynn) Hartsfield, married a daughter of John McElroy.
Andrew Hartsfield, born 1713, probably Pennsoakin, New Jersey, son of Godfrey and Katherine (Walker) Hartsfield, married Sarah Lynn.
Godfrey Hartsfield, born 1780s?, Philadelphia County, Pennsylvania, son of Georgen/Jurian/Urian and Margaret Hartsfelder, married Katherine Walker, daugther of John Walker.
Georgen/Jurian/Urian Hartsfelder, born 1750s?, Germany?, married Margaret.
