Bill,
The 1880 Census of District 1, Marion County, Mississippi (Mississippi Census Volume 14, Enumeration District 131, Sheet 13, Lines 38 through 48) show the following:
38 G. W. Hartsfield, age 44, born Mississippi
39 Allisa, wife, age 40, born Mississippi
40 Henry W., son, 18, Miss.
41 Emma, daughter, 17, Miss.
42 Allisa, daughter, 15, Miss.
43 George W., son, 13, Miss.
44 Sarah, daughter, 11, Miss.
45 Mary, daughter, 8, Miss.

Mollie and Elijah may not have been born yet in 1880.The 4 year age difference between G. W. and Allisa in 1880 is the same as that between George W. and Elise in 1910.The ages are off by 3 years.
In the 1860 Census of Marion County, Mississippi on page 958, lines 14 through 22 and line 7:
14 Asa Hartsfield, 55, farmer, South Carolina
15 Olive, 45, Mississippi
16 Reuben, 31, farmer, Miss.
<<7 Asa Hartsfield, 28, farmer, Mississippi>>
17 George, 22, farmer, Miss.
18 Elizabeth, 15, Miss.
19 John, 11, Miss.
20 Franklin, 11, Miss.
21 Ann, 8, Miss.
22 Katherine, 4, Miss.
In the 1850 Census of Marion County, Mississippi on page 183b, lines 29 through 39:

The following is my theory but not proven:The Hartfields of Mississippi all seem to descend from three brothers:Reuben, John, and Asa.Their father, George, bought property in what is now Marion County, South Carolina in 1771.In the 1780s he moved to Georgia with three of his four sons:John, Asa, and George, Jr.Reuben remained in South Carolina until the 1810s when he moved to Brunswick County, North Carolina and then to Mississippi in the 1820s.John moved to Mississippi about 1808 and Asa in the 1810s.George, Sr. died in Georgia about 1789 and George, Jr. died in Georgia about 1800.
It would seem to me that George W. Hartfield was the son of Asa Hartsfield who was born in South Carolina around 1800.Of the three Hartsfield brothers who came to Mississippi (John, Asa, and Reuben), Reuben was the only one in South Carolina in 1800.This 1800 Asa's oldest son was named Reuben (born about 1828 in Mississippi).
George Hartsfield, Sr. was probably born in the 1730s.He seems to be most closely associated with John Hartsfield.John is probably George's father.John, Andrew, and Paul were all born in the 1710s in the Philadelphia area to Godfrey Hartsfield.Godfrey was living in Maryland in the 1720s and bought property in what is now Lenoir County, North Carolina in 1744.
George is thought to have been born in the 1680s in Germantown, Pennsylavania to Georgen (Urian) Hartsfelder.Nothing is known of Georgen's origins other than his first name seems to be Swedish and his last name is German. He was living in Marcus Hook, Pennsylvania in 1675 which was a Swedish community. He was described as German or Dutch by a contemporary. The origin of the name Hartsfelder seems to be one who came from the region of Germany known as Hartsfeld (umlaut on the "a").
If all of the above theories are true, George W. Hartfield's great grandfather was George Hartsfield whose great grandfather was Georgen (Urian) Hartsfelder.
I hope this helps.
