Mary The family you are looking for almost certainly is that of John Haig b.24/10/1803 d.20/3/1878 m'd Rachael Veitch b.6/4/1820
They were in Wemyss then moved to Edinburgh and would almost certainly be there in 1860. Children were William, Mary, Hugh, John, Douglas (who became Field Marshal in 1st WW. I dont have access to the 1861 census but I believe it is in the process of being digitised now.
Hope this helps. You can find William b.1841 Hugh b.1845 and Douglas b.1861 on the 1881 census in Edinburgh
