I don't think there is a definitive answer.Some Grevilles may well have come from the village in Normandy and be named after it. There are a variety of different spellings/names which have morphed into "Greville", some more ancient than others. Remember people didn't use surnames until fairly recently.
I have actually met two people whose (20th century) ancestor changed their surname to Greville because they thought it was a classic and classy English name!
