I have been told that our Goulding name was originally something such as Gold or Golden, as it was something to do with the occupation of the person (Jewish), which later would be changed to Goldstein, or Goldbeirg (whether the spelling had GOU or not I don't know) then later again, was changed to Goulding. We have a 'family bible' that my Great Aunt keeps locked away somewhere and I am yet to see, but it apprently details this name transformation.
Don't know it this helps - but might give you an insight.
