This is not my family but I live in Florida and might be able to help you.

Pineville is in Escambia County. You are right as that is where your Jesse Gipson lived according to census records.

1910 Census Escambia Co., FL
Pineville - District 12

Wiley Gibson 29 (b: c1881 AL) Farmer, both parents born FL
He was married 10 years (married about 1900)
Maggie Gibson 26 (b: c1884 AL)Wife, her parents born AL
They had 1 child and 1 child living:
Jesse R 5 (b: c1905 FL) Both his parents born AL

1920 Census Escmabia Co., FL
Pineville - District 28

Wiley Gipson 38 (b: c1882 AL) parents born USA
Maggie 36 (b: c1884 AL) parents born AL
Jesse 15 (b: c1905 FL) parents born AL
(Jesse was their only child and they lived on
Pineville Road)

Escambia County, Florida is out west in the Panhandle of Florida right next to the border with Alabama near Pensacola. I believe the Coourthouse in Escambia County would have records for you.
