Help going forward re: Christopher Nowack Arnsfelde, Prussia c1816

I have traced my great-grandfather Christopher Nowack and wife Elise back to Arnsfelde, Deutsch Krone, West Prussia. I found his emigration record in the Hamberg departure index. The record itself shows that he was from Arnsfelde. Christopher and Elise and son August left Hamberg on the steamer Bavaria arriving in New York on 9 July 1860. I have little knowledge of where to go from here in trying to go back further in Germany/Prussian records. Now that we have this info, what would be the next step to find birth and marriage records? The family was and is German Catholic.

Also, for any one used to reading German records, I cannot figure out the skill/occupation listed on the departure record. The record is at:

On the New York arrival record, he listed his occupation as farmer but the German word on the departure record doesn't appear to be the word for farmer. Any clue would be a great help.
