Lisa, you say a "longshot", but this is really very simple! If he americanized his name to Francis Smith, then you can safely assume that his name in Germany was FRANZ SCHMIDT.

One other note: Like the U.S., Germany has always been made up of states. Your great-great-great-grandfather was from what was until 1866 the German state of Electoral Hesse (in German: Kurhessen), the capital of which was the city of Kassel. From its capital city, Electoral Hesse (Kurhessen) was often referred to simply as Hesse-Kassel (or to use the older spelling, Hesse-Cassel).

The former Electoral Hesse (Kurhessen) or Hesse-Kassel forms the northern and eastern portions of today's post-World War II German state of Hesse (in German: Hessen).
