Ken,
as you might know, Meyer is the most common name in Germany, like Miller or Smith or so.
But maybe I can tell you something according to your questions:
1. Meyer is the most common spelling. But in Germany there is Meier, Maier, Mayer too.
2. I found STOLZENAU, it´s located on the river Weser, close to the lake "Steinhuder Meer", between Nienburg and Minden, if you can find it on a map.
"Hannover/Westfalia" as a region is now (since 1945) the federal state of Niedersachsen (Lower Saxony) with federal capital in Hannover (city).
3. There´s a internet web page http://www.stolzenau.dehttp://www.stolzenau.de
It´s all in German, but there is a "Ihre Nachricht"(your message), where you can leave a message, try it in English, maybe someone can tell you some addresses of Lutheran churches.

If it exists, it will get there, the German Post is (mostly) very clever.
4. If he was from Stolzenau, Bremen was the closest port to leave for America, it´s also on the river Weser. The only other port to leave (from Germany) was Hamburg.
