I entirely agree with Lucy's way of doing surname entry.
Itis much easier to search any database when major name fields (given name, surname, place name) are normalized (standard).

The principle of keeping a note, by any means available, of the actual name as spelled, written in the source records is quite valid for several purposes such as ethnologic study or matching. The note should be as precise as to indicate the specific source(s) where the non-standard name(s) appear(s).
This way you gain on both sides.

Most current genealogy software packages are able to do this.
If your software is not, change software.
