I realize these ideas are a little vague but hopefully they'll yield something -
Two places I've found information about mother's names and parents from that period are wills and deeds. (One line we searched for years -knew her fathers name but couldn't find her first name. Then someone found it on a deed when her father sold land to the son-in-law.)
Have you found a will for Hopkins Lee ? Or one for Jackson Lee ?
I'm not familiar with those states , different states started vital stats at different times and at different gov. levels. Any chance of a death certificate for the son Jackson Lee?
The only other thing I can suggest is to use my favorite "cheat sheet" - (standard disclaimer: While I've found the IGI full of errors and sloppy genealogy I have also found it invaluable for hints and leads- http://www.familysearch.org/Eng/Search/frameset_search.asphttp://www.familysearch.org/Eng/Search/frameset_search.asp )
If you do a search on Hopkins Lee in the Pedigree Resource File the entry numbered "9" is yours. Lists 1st wife as Tabitha Lee and 2nd as Matilda Jackson. The submitter was -

It also lists a url for his home page. Interestingly enough he does not have Hopkins or Jackson listed under his Lee descendents . A guess would be he was keeping track of all the Lee's he came across in case they proved to be related in the future (which apparently they didn't). He appears to be a good researcher (meaning he lists sources). If you can get in touch with him he may have notes on these people.
