I would be inclined to think that the Dan Gaquin you found is in fact one and the same as your grandfather Daniel Gacquin and that it is his birth date as you have it from the tombstone which may be a little too late. It seems to me that his age at marriage of 18 is probably young for that timeperiod although I have no idea of the average age at marriage for males at that time in New York.
If you could get a record of his birth it would clear up the age question. I have only seen records from Mass. State and on the death certificates they give parents names and the place they were from. If those for NJ or NY do the same it should be possible to see where Daniel Gacquin's parents came from and maybe solve the problem of Ireland or France.
As far as I can make out the use of Daniel in Ireland in the Gacquin family probably resulted from a translation of Denis from French to the Irish Language as Donnacha and a mistranslation from the Irish to English of Donnacha to Daniel(the proper Irish for this name is Dónal).
