I am guessing Joshua's father is Wm. J. Sappington who married Martha H. Starr 6 Dec 1821 in Wilkinson GA. (per GA Marriage records on Ancestry.com)

She was the mother of twelve children; two died in infancy, seven of the ten that grew up preceded her to the grave. L. Rush

These clues all seem to fit your Joshua's given name and his middle name of Starr.
