Well, I can at least provide a year of birth! According to "The History of Stewart County Georgia, Vol II" by Sarah Robertson Dixon and A.H. Clark (1975), on pages 728-729, I have the following:

Tabitha Colbert, b. 1839; m. John R. Jones; issue:
1 -- Fred B. Jones;
2 -- Borie Jones;
3 -- Augusta Jones m. Jessie Carter;
4 -- Mattie Jones m. Z.E. McCurdy

She is the daughter of William Beverly Colbert (b. 1799 or 1800 in Georgia, no death date), and his second wife Nancy (last name unknown). He married a third time to Jane Evans, and those two are buried in Cedarwood Cemetery, Richland, GA. The first wife's name is unknown.

Then there is this, at the end of the entry:

They had the old W.B. Colbert home on Slaughter Creek, torn down and brought to Richland and rebuilt on E. Broad Street where it still stands and in which they operated a boarding house for years before moving to Florida.
