In essence all the Fredettes in the US and Canada are descended from Jean Fradet the son of Thomas Fradet and Anne Rouse of the Bordeaux region of France. Jean arrived in Canada in the late 1600s and among many children sired two sons, Jaques and Augustin, from whom the rest of us are descended.
Check the 1850 US Census for NY State and you will find a James Fredette & family in Essex County. They are likely among the very first Fredettes to come in from Canada.
Later, especially from the 1860s to the late 1800s there were a number of Fredettes married in the town of Redford in Clinton County.
I may be able to give you more specific help if you can tell me what public libraries you have access to. If you think I can help you please contact me at my e-mail address.
