Before going I suggest doing as much research online as possible. It will save you a lot of time and wasted effort. The website is in French but it isn't too hard to figure out how to get around using a French/English dictionary (the amount of French I know wouldn't fill a thimble). The records from about 1808 are also in French. The records before about 1808 and after about 1873 and Protestant records before 1793 are in German gothic longhand which not only requires the ability to read German but the old style longhand used by German speaking people back then (which I can read quite well). Catholic records are usually in Latin, French and sometimes German.
I can confirm Michel Denni was born the 14th day of Ernte (Messidor) in the 7th year of the Republic or on the Gregorian Calendar June 30, 1798 to the parents you list. With a bit of research you should be able to find much more. For example Heinrich (Henri) Denni died April 22, 1830 at age 71. His parents were George Denni and Barbe Mehl (Georg and Barbara in German). Georg was from Schillersdorf. Anne Catherine Staat died January 22, 1823 at age 57. She was the daughter of Paul Staat (mother's name not listed). Michael and Saloma were married May 22, 1823.
Don't be thrown by the French spelling of names, that is how their names were recorded rather than what they went by (I usually go by how they signed their names). There are several websites to convert the dates from the French Revolutionary Calendar to the Gregorian.
