I don't see anything on Scheritz in France (http://www.geopatronyme.com/ geneanet, etc)

There can be multiple origins for a surname, so there's no way to verify where your family comes from with the information you have. Sherrod does appear in early English records, but equally there could be a branch of a German family who changed their name from Scheritz.

The only way to know for sure is to trace your particular family line back until you find your immigrant ancestor.
