Epinette is a name in France even today (may also see it Épinette, looking at www.geneanet.com)

You would have to figure out what parishes he most likely came from and check the parish records for his birth/marriage/etc.
'Epinette' is also a musical instrument - the surname was probably originally adopted by people who made these.
