I've looked through my files, but can't find any additional information that would help you.It certainly sounds plausible that your Henry Foster was the youngest son of Henry Foster who died in Nicholas County in 1849.(I notice that the 1840 census doesn't show any male younger than 15 in the household, but we all know how unreliable census records can be.)
I think the Henry Foster, 24, listed next to Jackson Foster in the 1860 Nicholas County census is almost certainly be the son the older Henry listed in his will.So the crucial question seems to be whether he's the same Henry Foster (1836-1905), who lived in Marion Co., IL, and Newton County, MO.The fact that the latter named a son "Jackson" is good evidence, since we know that Henry Foster of Nicholas County had a brother by that name.If you're sure that he was born in Carlisle (Nicholas County), KY, I'd say that pretty much settles the matter.
If would be great if there were a Nicholas County deed, dated sometime in the 1860's, in which Henry and his wife, Catherine, conveyed property acquired, for example, from his brother, Jackson, or (even better) which had passed to him from his mother Easter/Esther Foster, widow of Henry Foster Sr.If the deed were signed in Marion Co., IL, after he had moved there, that would be great.So I'd suggest ordering a deed index for Nicholas County through a local Family History Center, to see whether there is a deed that would settle the matter.
An additional bit of information that you may not have: Esther Foster, who I presume was your Henry's mother, died in 1855.The death records state that she was the daughter of John and Sarah Whittington.I don't have any information about them, however.
