Hello Joachim
I just returned from a trip to Ireland searching the National Archives in Dublin as well as the Valuation Office there for information on Forkers.
My wife's forebears, (who were Forquers in the US in the early 19th century)were Forkers in Donegal (Annagary). The Valuation office records also show that in 1830, John Forker )living on the same farm as he was five years earlier) was called John Farquar. All the Annagary Forkers in that Valuation Survey record were carried as Farquars.
Since few could read and write English in that part of Ireland, (because of the penal laws)it's not surprising that Farquar got phoneticized into Forker, and subsequently into Forquer in the US.
