The name is not Italian in origin, but instead Latin and is from a region between Portugal and Spain. It may be interpreted to mean dry well/fountain. A better interpretation is seasonal well/fountain from a well/fountain that dries up in summer. This was the nature of the land owned by the individuals who adopted the name.
