In 1978, I stopped in the sacristy of the parish church of Virginia, Co. Cavan, where my great great grandparents came from, and talked with the then parish priest, Fr. Morris (R.I.P.). I asked him why Fitzsimons becomes Fitzsimmons in the USA, and he said the English language tends to force consonants to double when they occur between vowels. Hence, according to Fr. Morris' hypothesis, "imo" becomes "immo." I don't know how this accounts for words like "thermometer" where "omo" does not change to become "thermommeter:" that becomes a problem for students of language.

A fourth cousin recently sent me plat maps of Fayette County, Iowa, where my gg grandparents settled after emigrating from Ireland in 1847, and the 1868 map shows the name as Fitzsimons, while the 1879 and later maps show it as Fitzsimmons.
