Wesley Fite and Amanda Caroline Pollock

I am seeking information on Wesley Fite, born 1828-1829, who married Amanda Caroline Pollock on 7 August 1849 in Lewis Co, TN. Amanda is the daughter of Daniel Pollock and Roda Christian. They have one daughter, Dicey Fite. Dicey married Neil Caplinger on 12 Sep 1880 in Newton Co, MO. I cannot find any information on any of these people. Has anyone out there run into them in their research? I have checked TX, AR, MO and OK census indices. Did they move farther west?
