Fisk is a surname. Most Swedes didn't use one in the old days but this family did. Johansson is a patronymic name meaning Johan's son. (It could also mean Johannes' son.) It was made with the father's given name **plus a possessive s** and then son for male children and dotter for female children.
Johansson and Johanson are the same name but usually the second s was dropped after emigration. Sometimes the second s might have been accidentally left out in Swedish records. The order of the names (Johansson Fisk or Fisk Johansson) means nothing and is not a "name switch". Yes, those people I listed are all yours.
